I've been braising short ribs in this thing all winter and the cast iron holds heat so evenly that nothing scorches on the bottom. Also love that I don't have to baby the enamel — no rust worries like my old bare cast iron.
Braised a whole chicken in this thing for two hours and it came out falling off the bone—the cast iron holds heat so evenly that I barely had to adjust the flame. Also nice not worrying about rust like my old bare cast iron.
The porcelain enamel surface cleans up so much easier than my old bare cast iron—no seasoning, no rust worries. I've made stews and braised short ribs in it and everything comes out tender. The color also looks great sitting on the stove.
